The Carbon simulation cache is an internal cache, that only ever resides in memory.
It allows scrubbing of the timeline without re-simulating and also, as of v1.1.2 it supports partial restart of the simulation at any frame.
In future releases we will also use this cache to deliver some exciting new features
You can also disable it if you are doing a large sim and you don't have much memory.

However there is no direct support to save out any Carbon simulation caches.
If you want to save mesh caches to disk then you can use the Maya Geo caching and here is a short (1:17) video overview of doing that.
